Halloween Treats - Paleo Friendly Macaroons

Since most of us have our sweet tooths rear their ugly head on this wonderful, candy filled holiday, I thought I would share a sweet treat that will get you through Hallween safely.


I recently found this recipe and successfully made it for my friends who all seemed to love it!  These super easy to make macaroon cookies are Paleo friendly and tastey!  I have made a couple changes, so note them in blue.  I got the original recipe from a great website called Paleo Blocks.


From Paleo Blocks:


MACAROONS:
1 - 7 oz. bag shredded unsweetened coconut (2 2/3 cups)
1 cup sliced raw almonds (You can also just use a a food processor to chop them up)
1/4 cup raw honey
4 large egg whites (Make sure if the eggs are small you can add another egg white, and most importantly, make sure to whisk the eggs before adding)

1/4 cup almond meal (This will help 'fluff' them up and make them more cookie-like)
1 tsp  vanilla extract (if you want, and you aren't on super strict paleo)
1. Preheat oven to 325 degrees F. Line cookie sheets with parchment, or brush with olive oil. Into large bowl, measure coconut, almonds, and honey. With spoon, mix until combined. Stir in egg whites until well blended.
2. Drop mixture by heaping tablespoons, about 2 inches apart on cookie sheets. Place on parchment paper rather than directly on cookie sheetPlace cookie sheets on 2 oven racks. Bake cookies 20-25 minutes - or until golden. Rotate the cookie sheets between upper and lower racks halfway through baking time. With pankcake turner, remove cookies to wire racks to cool completely. Store cookies in a tightly covered container.
Makes about 1 1/2 dozen (I thought they actually make about 2 1/2 dozen)
